| Abstract: | Bakalářská práce popisuje logistické procesy v malé cateringové firmě a implementaci postupů vycházejících z principu HACCP (Systém analýzy kritických kontrolních bodů), který je doporučen pro provozovatele stravovacích zařízení. Certifikát HACCP je mezinárodně uznáván a může sloužit jako doplnění pro certifikaci o zavedení managementu kvality řady ISO 9000. Práce nepopisuje zavedení plného systému HACCP, ale systému z něj vycházejícího v návaznosti na nezbytná hygienická opatření, která jsou závazná pro všechny stravovací provozy. |

| Abstract: | The bachelor thesis describes the processes of logistics in a small company providing catering services and implementation of a method based on HACCP (Hazard Analysis and Critical Control Points), which is recommended for the operaters of eating facilities. The HACCP certificate is internationally regarded and it can be a complement for ISO 9000 certificates. The thesis does not describe running complete HACCP system, but only a partial system based on HACCP and also necessary hygienic moves, which are mandatory for all the eating facilities. |
