Cílem diplomová práce je optimalizovat obsluhu s přihlédnutím na náklady a zisk restaurace v centru Prahy. Pro tyto účely byl navržen model současného stavu v prostředí simulačního softwaru Simul8 a to na základě sebraných dat z let 2006 - 2012. Tento model byl dále zkoumán a vyhodnocován. Situace se pro restauraci nejevila pozitivně, obsluha byla nad míru vytížena a někteří zákazníci ji opustili ještě před započetím obslužného procesu. Experimentem se vytvořily tři varianty, které řešily nadměrné vytížení obsluhy a zároveň zlepšily ziskovost restaurace. Z těchto třech variant byla jedna vybrána managementem podniku pro reálné zavedení do restauračního provozu v roce 2013. |

| Abstract: |
The diploma thesis aims to optimize restaurant staff with regard to costs and profit of a restaurant in the Prague city centre. For these purposes a model of the current state was projected in simulation software Simul8 based on data collected from 2006 till 2012. This model was further studied and evaluated. The situation did not seem positive for the restaurant, the service was in excess of busy and some customers have left it before starting the servicing process. Through experiment there were created three variants that deal with excessive restaurant staff workload and improve restaurant profitability. Of these three options was chosen one for real implementation in 2013. |
