Abstract: | Diplomová práce se zabývá spotřebou vody v živočišné produkci v kontextu s aktuální problematikou sucha. Představuje koncept vodní stopy a vysvětluje, jak je živočišná produkce spojena se zemědělskou, která je největším spotřebitelem pitné vody. Pomocí regresní analýzy jsou odvozeny poptávky po drůbežím, vepřovém a hovězím mase a zkoumán vztah ceny vody a ceny masa. Jsou navrženy spotřební daně na maso a je analyzováno, jak se změní spotřeba masa ve 4 různých scénářích: zdražení ceny vody, zdanění všech druhů mas, zdanění drůbežího masa a zdanění vepřového masa. Pro každou variantu je spočítaná vodní stopa. Výsledky ukázaly, že nejefektivnější způsob, jak snížit spotřebu vody v živočišné produkci, je zdanit vepřové maso. |

Abstract: | The master thesis deals with water consumption in livestock production in context of the current issue of drought. It presents the water footprint concept and clarifies the nexus between the livestock production and the agriculture which is the largest consumer of water. Technique of regression analysis is used for estimating demand functions for poultry meat, pork and beef and for investigating the relationship between the price of water and the price of meat. Excise taxes for meat are designed and the change in consumption of meat is analysed under 4 scenarios: increase of the price of water, tax on all meat, tax on poultry meat and tax on pork. The water footprint is calculated for each option. As results have shown the tax on pork is the most effective way for reduction in water consumption in livestock production. |
