| Abstract: | Předkládaná diplomová práce se zabývá managementem kvality v pohostinství. Konkrétně analyzuje možnosti aplikace nenormativního přístupu řízení kvality zvaného Lean management (štíhlé řízení) v oblasti hotelnictví. Štíhlé řízení pochází z Japonska, ale ani zde není v oblasti hotelnictví rozšířeným pojmem. Práce analyzuje vybrané procesy v hotelu Imperial Tokyo a na konkrétních příkladech navrhuje využití nástrojů Leanu ke zlepšení pozorovaných procesů. Na závěr poznatky zobecňuje a hodnotí využitelnost jednotlivých nástrojů Leanu v hotelnictví. |

| Abstract: | This diploma thesis deals with a quality management in hospitality. Specifically, it examines the possibilities of applying a non-normative quality management approach called Lean management in the hotel industry. Lean management originated in Japan, however it is not a widespread term in the hotel industry even there. The paper analyses selected processes at the Imperial Hotel Tokyo and, using specific examples, suggests Lean tools to improve the observed processes. Finally, the findings are generalized and the utility of Lean tools in the hotel industry is evaluated. |
