Abstract: | Tato práce navrhuje nový model procesu přetypování výroby balicí linky ve společnosti vyrábějící nečokoládové cukrovinky. Teoretická část práce přináší evidenci uplatnění metody SMED v různých odvětvích včetně potravinářství, kterému doposud nebyla v této souvislosti věnována pozornost. V rámci praktické části je formou případové studie předložen návrh založený na implementaci systému SMED podle Shingeovy klasické koncepce. Projekt byl metodologicky veden podle cyklu DMAIC a zahrnuje různé techniky (SIPOC, SMED, nástroje procesního mapování) přístupu Lean Six Sigma. Součástí projektu byl návrh nového pracovního postup, zlepšení technického stavu linky a školení pracovníků. Výsledkem bylo snížení celkového času přestavby o 40 minut (22 %), snížení počtu operací ze 124 na 70 (o 44 %) a zkrácení trasy o 318 m (23 %). Navržená opatření způsobila zvýšení teoretické výrobní kapacity úzkého místa ve společnosti, která byla předmětem práce. |

Abstract: | This paper proposes a new model of a packaging line changeover process in a non-chocolate confectionery manufacturer. The theoretical part of the work brings evidence of application of the SMED method in various branches including food industry, which has not been given enough attention yet. In the practical part, a case study is presented with a proposal based on the implementation of the SMED System according to Shingo's classical concept. The project was methodologically guided by the DMAIC cycle and includes various techniques (SIPOC, SMED, Process Mapping tools) of the Lean Six Sigma approach. A new work standard was drafted as well as the technical condition of the packaging line was improved as a part of the project. In addition, training sessions on the new methodology and changeover standards were conducted. As a result, the total changeover time was reduced by 40 minutes (22%), the number of operations got reduced from 124 to 70 (44%) and the length of the route was shortened by 318 meters (23%). The proposed design resulted in an increase in the theoretical production capacity of the Value Stream’s bottleneck. |
