| Abstract: | Nakládání s odpady je již dlouho jedním z nejzávažnějších problémů moderní doby. Množství vyprodukovaného odpadu výrazně převyšuje množství, které lze zpracovat nebo zrecyklovat. Cílem této bakalářské práce je zhodnotit přístup stravovacích zařízení v Benešově a okolí k tématu udržitelného nakládání s odpady a analyzovat schopnost těchto podniků přizpůsobit se šetrnějšímu nakládání s odpady. První kapitola vymezuje pojmy jako udržitelnost, udržitelný rozvoj cestovního ruchu a udržitelnost ve stravovacích zařízeních. Druhá kapitola se věnuje odpadům, jejich klasifikaci a odpadovému hospodářství. Třetí kapitola popisuje některé z technologií, které se používají při nakládání s odpady. Čtvrtá kapitola se zabývá stravovacími zařízeními v Benešově a okolí a pátá kapitola je věnována vnímání této problematiky návštěvníky stravovacích zařízení. V poslední kapitole jsou zpracovány výsledky dotazníkového šetření a hloubkových rozhovorů a je zde také vyvozen závěr. |

| Abstract: | Waste management has long been one of the most serious problems of modern times. The amount of waste produced far exceeds the amount that can be reprocessed or recycled. The aim of this bachelor thesis is to evaluate the approach of food and beverage facilities in Benešov and its surroundings to the topic of sustainable waste management and to analyse the ability of these businesses to adapt to more environmentally friendly waste management. The first chapter defines concepts such as sustainability, sustainable tourism development and sustainability in food and beverage facilities. The second chapter focuses on waste, its classification and waste management. The third chapter describes some of the technologies used in waste management. The fourth chapter deals with food and beverage facilities in Benešov and its surroundings and the fifth chapter is devoted to the perception of this issue by guests of these facilities. The last chapter presents the results of the questionnaire survey and in-depth interviews and draws a conclusion. |
