| Abstract: | Tato bakalářská práce se zabývá vlivem pandemie na tržby podniků v gastronomickém průmyslu. Zaměřuje se na provozovny podnikající v gastronomii v České republice rozdělené do několika segmentů. Za tím účelem zpracovává data z pokladního systému Storyous, kde jsou uloženy informace o účtenkách podniků, a to za pomoci hned několika statistických metod. Zpracování dat probíhalo v jazyce SQL a následné analýzy a výstupy v jazyce Python a programu Statgraphics. Cílem bakalářské práce je zjistit, jaký vliv měla pandemie na tržby podniků, a co stálo za propady v tržbách. Z toho důvodu zkoumá, zdali propady byly ovlivněny změnou chování zákazníků, nebo tím, že podniky musely být z důvodů omezení zavřené. Následně zjišťuje, zdali pandemie měla rozdílný dopad na různé podniky rozdělené dle segmentů a polohy provozovny. Posléze kvantifikuje propady v tržbách za pomocí lineárních regresních modelů. Hlavním přínosem práce je zjištění skutečných dopadů omezení na tržby podniků gastronomie během dvou let pandemie Covid-19. |

| Abstract: | This bachelor's thesis examines the impact of the pandemic on the sales of businesses in the foodservice industry. It focuses on foodservice establishments in the Czech Republic divided into several segments. To this end, it processes data from the Storyous POS system, which stores information on the businesses' receipts, using several statistical methods. The data processing was done in SQL and the subsequent analysis and output in Python and Statgraphics. The aim of the bachelor thesis is to find out what effect the pandemic had on the sales of businesses and what was behind the drops in sales. Therefore, it examines whether the declines were influenced by a change in customer behaviour or by the fact that businesses had to close due to restrictions. It then investigates whether the pandemic had a different impact on different businesses, broken down by segment and location of the establishment. It then quantifies the drops in sales using linear regression models. The main contribution of the paper is identifying the actual impacts of the restrictions on the sales of foodservice businesses during the two years of the Covid-19 pandemic. |
