| Abstract: |
Tato diplomová práce analyzuje udržitelnost školních jídelen ve městě Benešov a stanovuje návrhy pro zkvalitnění současných udržitelných postupů. Dále se práce zaměřuje na pedagogy, kteří svými postoji k udržitelnosti mohou ovlivňovat vztah žáků k tématu. Benešov je členem Národní sítě Zdravých měst ČR a chápe udržitelnost jako jednu z neopomenutelných součástí rozvoje. Výběr tématu byl motivován zájmem vedení městského úřadu o posouzení současného stavu udržitelnosti místních školních jídelen. Teoretická část práce přibližuje roli školních jídelen v sektoru hospitality, vymezuje charakteristiky stravovacích zařízení, školních jídelen, a věnuje se konceptu udržitelnosti. Uvádí dopady provozu školních jídelen na pilíře udržitelnosti a představuje některé projekty zabývající se udržitelným stravováním. Praktická část zahrnuje kvalitativní výzkum v podobě rozhovorů vztahujících se k analýze současné úrovně udržitelnosti školních jídelen, a kvantitativní výzkum zpracovaný prostřednictvím dotazníku k určení postojů pedagogů k problematice. Výsledky výzkumu identifikovaly udržitelnost jako stěžejní téma, které je stranami zapojenými do procesu považováno za důležitou přidanou hodnotu školních jídelen. Navrhovaná doporučení rozdělená do ekonomického, environmentálního a sociálního pilíře mimo jiné zahrnují edukační projekty pro žáky, pravidelnou komunikaci a spolupráci mezi zainteresovanými stranami a stanovení udržitelných cílů. Z analýzy dotazníkového šetření vyplynulo, že ačkoliv se udržitelnost do výuky příliš nepromítá, pozitivní vztah učitele k udržitelnosti předznamenává zvýšený zájem o edukaci žáků v tomto směru a zahrnutí tématu do výuky. Klíčová je v tomto ohledu spolupráce mezi školou a školní jídelnou. Práce nabízí komplexní pohled na problematiku, který by mohl být v navazujících studiích doplněn o výzkum zabývající se personálem školních jídelen a očekáváním žáků v souvislosti se službami školních jídelen. |

This thesis analyses the sustainability of school canteens in the city of Benešov and sets proposals for improving current sustainable practices. Furthermore, the thesis focuses on teachers, who, through their attitudes towards sustainability, can influence pupils’ attitudes towards the topic. Benešov is a member of the Healthy Cities of the Czech Republic and perceives sustainability as one of the essential components of development. The choice of the topic was motivated by the interest of the municipal administration to assess the current state of sustainability of local school canteens. The theoretical part of the thesis introduces the role of school canteens in the hospitality industry, defines the characteristics of catering establishments, school canteens, and discusses the concept of sustainability. It highlights the impacts of school canteen operations on the pillars of sustainability and mentions some projects related to sustainable eating. The practical part includes qualitative research in the form of interviews related to the analysis of the current state of sustainability of school canteens, and quantitative research conducted through a questionnaire to determine teachers' attitudes towards sustainability. The results of the research identified sustainability as a core issue that is considered by the parties involved in the process as an important added value of school canteens. Divided into economic, environmental and social pillars, the proposed recommendations include, among others, educational projects for students, regular communication and cooperation between stakeholders and setting sustainable goals. The analysis of the questionnaire survey showed that although sustainability is not strongly reflected in education system, a positive teacher attitude towards sustainability predicts an increased interest in educating students in this direction and incorporating the topic into education. Cooperation between the school and the school canteen is key in this respect. This thesis offers a comprehensive view of the topic, which could be complemented in subsequent studies by research focused on school canteen staff and pupils’ expectations of school canteen services. |
