Tato bakalářská práce se zaměřuje na environmentální aspekt udržitelnosti v oddělení Food and Beverage (F&B) v hotelové síti CPI Hotels v Praze. Cílem je analyzovat provozní procesy z hlediska udržitelnosti a navrhnout doporučení pro implementaci udržitelných postupů. Práce je rozdělena do pěti kapitol. První dvě kapitoly vysvětlují problematiku udržitelnosti a plýtvání potravinami. Třetí kapitola představuje společnost CPI Hotels, kde byla sbírána data pro výzkum formou polostrukturovaných rozhovorů. Poslední dvě kapitoly detailně popisují metodu sběru dat, průběh rozhovorů, analýzu získaných informací a navrhovaná doporučení. Mezi doporučení patří zvýšení povědomí a zapojení zákazníků do udržitelných postupů, monitorování potravinového odpadu, školení personálu a zohlednění socio-kulturních rozdílů. |

| Abstract: |
This bachelor thesis focuses on the environmental aspect of sustainability in the Food and Beverage (F&B) department of the CPI Hotels chain in Prague. The aim is to analyze the operational processes from a sustainability perspective and to propose recommendations for the implementation of sustainable practices. The thesis is divided into five chapters. The first two chapters explain the issues of sustainability and food waste. The third chapter introduces the company CPI Hotels, where data for the research were collected through semistructured interviews. The last two chapters detail the data collection method, the interview process, the analysis of the information gathered and the proposed recommendations. Recommendations include increasing customer awareness and engagement in sustainable practices, monitoring food waste, staff training and consideration of socio-cultural differences. |
