| Abstract: | Diplomová práce se zabývá problematikou plýtvání potravinami ve vybraném podniku s důrazem na finanční aspekty. Cílem práce je identifikovat hlavní příčiny plýtvání potravinami ve vybraném podniku a navrhnout konkrétní doporučení a strategie, které by mohly přispět ke snížení tohoto problému a optimalizaci financí. V rámci výzkumu byly identifikovány hlavní oblasti, kde dochází k největším ztrátám, přičemž nejproblematičtější se ukázala fáze přípravy a zpracování potravin. Hlavními příčinami plýtvání potravinami byly fluktuace návštěvnosti, která vedla k nadbytečnému množství produktů, dále neefektivní řízení nákupu surovin, špatné praktiky při skladování, porušení teplotního řetězce při skladování potravin a chyby při přípravě a vaření. Práce také poskytuje přehled užitečných praktik z jiných podniků v sektoru HORECA, které mohou sloužit jako inspirace pro implementaci podobných opatření v dalších podnicích. |

| Abstract: | This thesis addresses the issue of food waste in a selected business with an emphasis on financial aspects. The aim of the thesis is to identify the main drivers of food waste in the chosen business and propose specific recommendations and strategies that could help reduce this problem and optimize finances. The research identified the main areas where the greatest losses occur, with the most problematic being the preparation and processing phase of food. The main drivers of food waste were fluctuations in customer attendance leading to excess products, ineffective management of food purchases, poor storage practices, breaches in the temperature chain during food storage, and errors in food preparation and cooking. The thesis also provides an overview of useful practices from other businesses in the HORECA sector that can serve as inspiration for implementing similar measures in other establishments. |
