| Abstract: |
Cílem práce je identifikovat hlavní příčiny plýtvání potravinami a navrhnout efektivní strategie ke snížení tohoto plýtvání, se zaměřením na plýtvání potravinami ve školních jídelnách a jeho následné dopady. Práce je rozdělena do sedmi kapitol. První kapitola představuje literární rešerši, která shrnuje dosavadní poznatky a výzkumy v oblasti plýtvání potravinami ve školních jídelnách a popisuje různé strategie a opatření, která vedou ke snížení plýtvání. Druhá kapitola popisuje aktuální situaci, doplněnou o regionální statistiky týkající se potravinového odpadu, přičemž je zohledněn přístup jednotlivých zemí včetně členských států EU. Třetí kapitola se věnuje současným trendům v oblasti školního stravování s důrazem na zdravou stravu, udržitelnost a inovace. Čtvrtá kapitola objasňuje definice klíčových pojmů, jako jsou potravinová ztráta a potravinový odpad. Pátá kapitola se zabývá příčinami plýtvání potravinami v různých fázích dodavatelského řetězce. V šesté kapitole jsou rozebrány dopady plýtvání potravinami – environmentální, ekonomické a sociální. Sedmá kapitola tvoří praktickou část práce, v níž je popsán průběh výzkumu, analýza získaných dat a navržena konkrétní doporučení pro snížení plýtvání potravinami ve školních jídelnách. Práce je zakončena shrnutím hlavních zjištění a návrhem opatření směřujících ke zvýšení udržitelnosti školního stravování. |

The aim of this thesis is to identify the main causes of food waste and propose effective strategies for reducing this waste, with a focus on food waste in school cafeterias and its subsequent impacts. The thesis is divided into seven chapters. The first chapter presents a literature review, summarizing existing knowledge and research on food waste in school cafeterias and describing various strategies and measures aimed at reducing waste. The second chapter outlines the current situation, supplemented with regional statistics on food waste, taking into account the approach of individual countries, including EU member states. The third chapter discusses current trends in school catering, emphasizing healthy eating, sustainability, and innovation. The fourth chapter clarifies the definitions of key terms, such as food loss and food waste. The fifth chapter examines the causes of food waste at different stages of the supply chain. The sixth chapter explores the impacts of food waste—environmental, economic, and social. The seventh chapter constitutes the practical part of the thesis, describing the research process, analyzing the collected data, and proposing specific recommendations for reducing food waste in school cafeterias. The thesis concludes with a summary of the main findings and a proposal for measures to increase the sustainability of school catering. |
