Předmětem diplomové práce je poskytnutí návrhů na zlepšení objednávkového procesu ve vybraném restauračním zařízení s využitím nástrojů Lean managementu a digitalizace. Navržená doporučení jsou zaměřena na omezení plýtvání v objednávkovém procesu a podporu kultury trvalého zlepšování v souladu s filozofií Kaizen. Prostřednictvím výzkumné metody pozorování je provedeno jedno pozorování současného stavu objednávkového procesu bez užití nástrojů Lean managementu a digitalizace a druhé pozorování s doporučenými zlepšujícími návrhy v oblasti objednávkového procesu. Výsledky měření jsou porovnány a diskutovány. Přínosem práce jsou adresná doporučení zaměřená na implementaci podnikového informačního systému, Kitchen Display System, integrace umělé inteligence (AI), internetu věcí (IoT) a Big data do informačního systému, vytvoření mobilní aplikace, vytvoření digitálního jídelního lístku, nastavení systému měření, hodnocení, inovací v oblasti procesů, vzdělávání zaměstnanců v oblasti Lean managementu a digitalizace. |

| Abstract: |
The subject of the diploma thesis is to provide suggestions for improving the ordering process in a selected restaurant using Lean management tools and digitalization. The proposed targeted recommendations are aimed at reducing waste in the ordering process and promoting a culture of continuous improvement in line with the Kaizen philosophy. Through the research method of observation, one observation is made of the current state of the ordering process without the use of Lean management and digitization tools and a second observation with the recommended improvement suggestions in the ordering process. The measurement results are compared and discussed. The contribution of the thesis is addressed recommendations focused on the implementation of enterprise information system, Kitchen Display System, integration of Artificial Intelligence (AI), Internet of Things (IoT) and Big data into the information system, creation of mobile application, setting up measurement system, evaluation, process innovation, training of employees in Lean management and digitalization. |
