The aim is to analyze the operational processes from a sustainability perspective and to propose recommendations for the implementation of sustainable practices. The thesis is divided into five chapters. The first two chapters explain the issues of sustainability and food waste. The third chapter introduces the company CPI Hotels, where data for the research were collected through semistructured interviews. The last two chapters detail the data collection method, the interview process, the analysis of the information gathered and the proposed recommendations. Recommendations include increasing customer awareness and engagement in sustainable practices, monitoring food waste, staff training and consideration of socio-cultural differences. |
